Chef Sébastien Balard, also formerly a sommelier, prepares local dishes using regional produce, blending traditional recipes and imaginative touches.
Delicious local products such as Aubrac beef, Bas Rouergue lamb, Aveyron and Ségala veal, cheeses such as Roquefort and Bleu des Causses, chestnuts... have pride of place. Not forgetting, of course, Aveyron, Tarn and Lot wines, as well as crus and vintages from all parts of France which will be the perfect accompaniment for your meal in the elegant dining room or on the terrace.
